Pancit Palabok

Ingredients:
20 oz. bihon/rice noodles (product from the Philippines and available at any Oriental or Filipino Store in your local area)
1 pkg Palabok mix (product from the Philippines and available at any Oriental or Filipino Store in your local area)
4 cooked eggs
1 cup cooked shrimps (chopped w/out shells and head)
1 cup chopped smoked fish
1 cup chopped bacon
1 cup fresh lime or lemon wedges
1/2 cup of chopped green onions
1 10oz. can-cream of celery soup (optional)
1/4 tsp. salt
1/4 tsp. paprika (optional)
1/4 tsp. ground garlic

Directions:
1. Dissolve palabok mix in 2 1/2 cups of water, mix cream of celery soup and bring to boil. Add paprika, salt and ground garlic. Cook sauce until done.

For Noodles:
Cook bihon noodles for 6-8 minutes until done. Drain in a medium strainer and tossed with butter or margarine into a separate medium bowl.

Toppings:
Add palabok sauce over cooked noodles. Sprinkle with small amount of grated cooked eggs, chopped green onions, cooked shrimps(grind or chopped), chopped bacon and chopped smoked fish.

Serve with lime or lemon on top of everything for extra flavor and texture.
